For the curves did you make a few individual then weld them together. How do you deal with the pinholes?

I used the captain caveman method. Took a square bit of steel put in the main curve, screwed it down in a couple places, tack welded it along the curve, then beat it violently and it kind of went into shape.  then remove piece, cut out about 2/3 of the rusty shit and booger weld your patch over top, making sure the door closes nicely over it.    Those pinholes got another patch.

To be fair they are all booger welds on metal that thin... unless your captain fancy with a Tig

What would the quality method have been for making that patch?

Probably to cut it out of rust free car, which I had one of, but never the two side by side.  Or really take the time to replicate the piece.  The quality answer is to get a better car and pretend it’s your dad’s old Plymouth.
